Creamy and fresh, this salad is loaded with healthy fats, dairy protein, anti-oxidants and rich in vitamins and minerals. It makes a great side to Mediterranean style dishes or along with something spicy to take down the heat! Easy to make and great all year round!

Ingredients:
Salad:
- 1 large or 2 small avocados, chopped
- 2 large field tomatoes, chopped, or equal amount cherry tomatoes halved
- 1/2 long english cucumber, chopped
- 1/2 medium red onion, finely diced
Dressing:
- 1/3 cup full fat Greek yogurt
- 1 tsp lemon juice
- 1 tbsp fresh dill, finely chopped
- 1 tbsp fresh chives, finely chopped
- 1/4 tsp salt
- twist of pepper
Directions:
- Start by making the dressing. Add all ingredients into a mixing bowl or glass measuring cup and whisk together. Let sit while chopping salad ingredients.
- In a salad bowl, combine the salad ingredients and then toss with the yogurt dill dressing. Use as much of the dressing as you wish, it may be too much for your liking or you may want to use it all. Use any leftovers for any future salad or as a dip.
- Serve immediately. Left overs will keep a day but avocados brown quickly so use before they turn.
