Nothings says Australia like Vegemite
Okay, there is nothing gluten or dairy free about this recipe but it speaks Australia through and through and as I am immersed in the Land Down Under, it only seemed appropriate to collect an Australian recipe to share! When in Rome, as they say! Vegemite is a savory staple to the Aussie’s, boasting a yeasty and salty flavour that is unique to itself! You can find it in speciality stores where ever you are!

Ingredients:
- 4 sheets store bought puffed pastry, thawed
- 1/4 cup Vegemite
- 3 cups sharp cheddar, grated
- 1 egg, beaten
Directions:
- Pre-heat oven to 425F and line 3 baking sheets with parchment.
- Place puff pastry, one sheet at a time, on a cutting board and spread a quarter of the Vegemite evenly across.
- Sprinkle a quarter of the grated cheddar over the Vegemite.
- Starting from the edge closest to you, begin to roll the pastry towards the further edge, careful not to roll too tightly.
- Set aside and repeat with the remaining 3 sheets.
- Cut each roll into 12 equal portions, an easy way to do this is to cut each roll into quarters then each quarter into 3.
- Place pastries, cut sides up, on baking sheet well spaced to let them expand.
- Brush both cut ends of the pastry with the beaten egg.
- Place in oven and bake for 15 – 20 minutes or until pastry is golden brown and cheese is melted.
- Let cool for 5 minutes before serving.
