Delicious Grain Free Chocolate Seed Cookies

What up? Healthy AND delicious?

These cookies are low carb, grain free, egg free, refined sugar free, nut free, gluten free and totally guilt free, too! What they are not free of is absolute yumminess! They are made of a combination of seeds and sunflower butter making them high in plant proteins, healthy omega fats, and fiber along with all the micro-nutrient goodness that seeds have to offer. They are one of my favourite experiments yet as these little gems came together as my very own creation! They are quick and easy to whip up as well and make a great healthy snack for kids.

Ingredients:

  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup hemp hearts
  • 1/2 cup unsweetened shredded coconut
  • 1/3 cup cocoa powder
  • 1 tsp cinnamon powder
  • 1/2 tsp sea salt
  • 1/4 cup sunflower butter
  • 1/4 cup maple syrup
  • 1 tbsp coconut oil
  • 1 tsp pure vanilla extract
  • Additional shredded coconut for rolling (optional)

Directions;

  • Pre-heat oven to 350F and line a baking sheet with parchment paper.
  • Place sunflower and pumpkin seeds, hemp hearts and shredded coconut into a food processor or blender and pulse until an even course meal is formed. Don’t over process but make sure it is evenly blended into a flour like consistency.
  • In a small sauce pan, heat the sunflower butter, coconut oil, maple syrup and vanilla until thoroughly combined and the butter has melted.
  • In a large mixing bowl, mix together the blender meal, cocoa, cinnamon and salt then pour in heated mixture. Stir to combine then use hands to finish the job forming a dough ball.
  • Separate the dough in to 12 pieces, rolling into balls with your hands. Option to roll these balls in more shredded coconut or place them directly on the baking sheet.
  • Gently press each ball down with your hands into a cookie shape being careful not to be to aggressive as the dough is a little fragile.
  • Bake in oven for 15 minutes then let cool before handling.
  • These store great in the fridge and help them firm up as well.
