Lip smacking sesame sweetness!
These healthy cookies are so quick and easy, only requiring 4 ingredients. Between the oat flour, tahini and sesame seeds, these cookies are high in plant based protein, healthy fats and fiber. If you love a sweet treat but want to move away from white sugar and flour based cookies, these are an excellent choice!

Ingredients: (Makes about 18 cookies)
- 1 cup tahini
- 2/3 cup pure maple syrup
- 1 cup oat flour (see note for DYI)
- 1/2 cup sesame seeds, more if needed for rolling
Directions:
- Preheat oven to 350F and line 2 baking sheets with parchment paper.
- Place tahini and maple syrup in a large bowl and whip with egg beaters. Hand whisk if no beaters available to you, make sure there are no solid tahini chunks.
- Turn in oat flour and thoroughly combine.
- Place sesame seeds in a separate small bowl.
- Measure out about a tablespoon of dough per cookie and roll into a ball with your hands then roll in sesame seeds.
- Place ball on baking sheet and press down to flatten.
- Bake in oven for 10 minutes. They will be soft straight out of the oven so let cool completely before handling.
- Delicious straight out of the freezer, store well.
