Simple weeknight throw it together!
This rich and satisfying soup is quick and simple and comes together for a weeknight meal with lunch ready for the next day! Very little fuss and hits the spot with its mild curry and coconut flavours.

Ingredients:
- 1 tbsp coconut oil
- 1/2 cup finely diced white/yellow onion
- 1 tbsp freshly grated ginger
- 1 tbsp curry powder or more if you like a stronger curry flavour
- 1/2 tsp cardamom powder
- 1/2 tsp cayenne or more if you like heat
- 2 medium potatoes
- 1/2 head of cauliflower
- 2 kale leaves, stems removed, sliced into ribbons (optional)
- 2-4 cups of water
- 1 tsp salt
- 1 can rinsed and drained chickpeas
- 1 can coconut milk
- 2 tbsp coconut aminos
- 1 tbsp lime juice
- Option to top with chopped cilantro, peanuts or cashews
Directions:
- In a large frypan or soup pot, sauté onion in coconut oil about 2 minutes or until starting to soften.
- Add fresh ginger and sauté another minute or 2
- Add curry powder, cardamom and cayenne and stir in another minute
- Add 1 cup of water and let onions, ginger and spices simmer for about 3-5 minutes, stirring to make sure nothing sticks, keep temperature low.
- Add potatoes, cauliflower, kale and chickpeas into fry pan or soup pot and cover with just enough water to submerge the veggies.
- Add salt.
- Bring to a boil and then turn down to simmer and cover.
- Cook until potatoes and cauliflower are just about tender and then add canned coconut milk.
- Add lime juice and coconut aminos.
- Let simmer another couple of minutes but do not bring up heat.
- Serve over rice or quinoa or eat straight up as a soup.
Add more lime for tang, aminos for salty sweet or your fave hot sauce to lift the heat just a little more if needed.
