Easy Oven Baked Kale Chips

Move over potato chips, the King of the kids is here!

It’s true, kale is an amazing leafy green that deserves its reputation. It can be difficult to get as much of these super foods into our diet as we would like so it may take some creativity! This recipe is especially great as it satisfies the crunchy savory and salty snacks that are often not good for us like potato chips. Kale is versatile and this recipe is no exception to the many ways to prepare it! Rich in vitamins, minerals, anti-oxidants and fiver, grazing on these crunchy little snacks has nothing but health benefits!

Ingredients:

  • 1 large bunch curly kale, leaf removed from thicker stem and torn into medium sized pieces (too small is hard to work with and too big is hard to eat)
  • Approximately 1/4 cup olive oil, will depend on how much kale your bunch yields
  • 1 tsp nutritional yeast (optional)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne (optional)
  • 1/4 tsp salt
  • Cracked pepper to taste

Directions:

  • Preheat oven to 350F and line 2 baking sheets with parchment  paper.
  • Prepare kale by washing and patting dry then tearing away from stem into medium size pieces.
  • Drizzle olive oil into bowl of kale leaves, toss, then gently massage the oil into each leaf, placing them into a second mixing bowl as you go. You may not need a full quarter cup, this depends on how much kale your bunch yields. Start with less oil and add more if you aren’t able to massage each leaf with the oil.
  • In a small bowl, add your spices together then add them to your bowl of kale leaves and again, toss, coating the leaves with the seasonings evenly.
  • Place the leaves flat on the baking sheets, try to avoid overlapping.
  • Place in oven for 10 minutes.
  • Remove, gently toss, rotate baking sheets if they are on different shelves and return to oven another 5 minutes.
  • Check again, some may be done, other thicker leaves may still need a couple more minutes. This step of watching is critical so as not to burn them.
  • Remove from the oven and pick through any remaining chips that may be soft still. Place these back into the oven for no more than 5 more minutes or until all are crispy but not burnt.
  • Let cool, place in a bowl or container on the counter and watch them disappear!
