Looking for a healthy energy bar that is nutrient dense, easy to make and scrumptious? This one hits the mark! Full of seed proteins and nutrients, healthy fats and a natural sweetener that isn’t refined, this bar will keep you going when you need a little mid day pick me up snack!

Ingredients:

  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/4 cup sesame seeds
  • 1/4 cup flax seeds
  • 1/4 cup chia seeds
  • 1 cup shredded, unsweetened coconut
  • 1/4 cup dark chocolate chips (optional)
  • 1/4 tsp sea-salt
  • 1 tsp pure vanilla extract
  • 1 tbsp coconut oil
  • 1/2 cup honey

Directions:

  • Pre-heat oven to 350F and line a square pyrex with parchment paper.
  • Place pumpkin and sunflower seeds in a blender and pulse gently until they are broken up but not over processed. Some bigger chunks are still okay.
  • Add pumpkin seeds and sunflowers seeds after pulsing to a medium bowl along with sesame, chia, flax, coconut and sea-salt.
  • In a small saucepan, warm up the honey, vanilla and coconut oil until completely liquid.
  • Pour liquid ingredients into the seed mixture and mix thoroughly.
  • Transfer seed mix into the baking pan and spread evenly.
  • With a second piece of parchment over top of the mixture, press firmly and evenly to compress the mix.
  • Place in oven for 40-50 minutes depending how hard you want the bars to get. My sweet spot was 50 minutes. Look for a golden colour. Keep watch not to let them burn.
  • Remove from oven, let cool then place in fridge for an hour to let them set.
  • When set, pull bars out of pan with parchment and turn onto a cutting board, they should hold together. Cut into bars.
  • Store in a container in the fridge or on the counter. Should stay fresh for a week or more but they won’t last that long!

  1. Notice you always use pure vanilla extract. Do you think it makes a difference in a bar that has a strong flavour or is it just a personal choice because it is natural?

    1. I prefer to use pure vanilla for both flavour and because it contains no extra sugar or additives. I know it is ridiculously expensive though! if all you have is artificial vanilla that is okay too!
