When the heat turns-up, cool down with this refreshing summer salad!
Turnips aren’t often considered when it comes to adding more veg to your diet but they are one of my fave root veggies and I love them raw! They grow super easy and fast in a home garden and are easy to find at your local farmers market. I love the fresh little salad turnips in the spring that are crunchy and a little spicy and I use them like a raw radish, thinly sliced into salads. This slaw uses grated spring turnips along with fresh carrots and crispy apples making this a naturally sweet and tangy summer salad. I have used both fresh parsley and mint as herbs in this salad and both are great but I lean towards the mint, choose your preference. Full of fiber, vitamin C, beta carotene and a host of other anti-oxidant heroes, this salad makes a great summer side for any occasion.

Ingredients:
- 1 cup salad turnips, grated
- 1 cup carrots, grated
- 1 cup crisp green apple, grated
- Fresh squeezed juice of one medium lemon
- 2 tbsp fresh mint (or parsley)
- 1 tbsp olive oil
Directions:
- Grate the turnips, carrots and apple with a box grater and place in a mixing bowl.
- Finely chop the mint (or parsley) and add to grated ingredients.
- Add juice of lemon to ingredients along with the olive oil and thoroughly combine.
- Transfer to a serving bowl if desired and serve immediately or let sit in fridge to settle flavours. Stores well for a couple of days.
