Refrigerator Red Onion Pickles

These quick and easy red onion pickles are great for taco night, bowls of all kinds, salads, sandwiches, wraps and more! Keep them in the fridge and top off your meals with a little zing!

Ingredients:

  • 1 large red onion, thinly sliced
  • 1 1/2 cup apple cider vinegar
  • 1/2 cup water 
  • 2 tsp sea salt
  • 2 TBSp real maple syrup or honey

Directions:

  • Start by sterilizing a 1 litre mason jar and lid with boiling water.
  • Thinly slice the red onion by hand or with a mandoline and pack into jar.
  • Bring the vinegar, water, salt and syrup or honey to a slow simmer and whisk until completely dissolved.
  • Pour the warm contents of the liquid over the onion being sure to cover the onion completely with the liquid. Compress the onion down if necessary.
  • Secure lid and let sit on the counter about 1/2 hour then store in fridge until ready to serve. Best if it has the afternoon to chill.
  • Stores well in the fridge.
