This week had me reflecting on the importance of the ceremonies we create around certain rites of passage we move through in our lives. It is a beautiful experience to come together to celebrate each other through life transitions and accomplishments. I felt the power of that this week as we joined together as a extended family to celebrate my daughters graduation from University. We surrounded her with support, love and pride, cheering her on as she walked confidently across the stage to receive her diploma. I felt accomplished as well because I actually managed not to cry!
Of course you can’t have a celebration without coming together in feast! And what did my daughter request for her graduation dinner? None other than our Homemade Tacos! Despite the planning and preparation that goes into our taco night, it brings me so much joy to do so! Tacos bring smiles!
This week it made sense to share with you some of the topping options we made available and the recipe on how to make Homemade Masa Harina Tacos yourself! In addition to the following recipes, we included a slow roast pork shoulder, grilled halloumi cheese and grilled pineapple on the BBQ and threw out a couple different homemade hot sauces and a roasted almond and arugula pesto (recipe to come) as well. When it comes to making tacos, anything goes! We always create a variety of vegan, vegetarian and meat eater options so there is something for everyone!
