Bring the taste of the Mediterranean to your table with this Greek inspired yogurt dip!
This yogurt and cucumber dip is fresh, comes together easily and tastes so much better than a store bought variety. Use it as a dip for veggies, pita, crackers, skewers or in pita wraps, on salads or an addition to your favourite Greek inspired meal! The key to success is purchasing a full fat plain Greek yogurt, no questions!

Ingredients:
- 1 medium field cucumber peeled and grated
- 1 tsp salt
- 3-4 cloves garlic
- 1 tbsp fresh squeezed lemon juice
- 2-3 tbsp finely chopped fresh parsley or dil or 2 tbsp finely chopped mint (or mix and match if you wish)
- 2 cups full fat plain greek yogurt
- salt and pepper to taste
Directions:
- Start by peeling the skin off your cucumber and then using a box grater to grate it into a fine mesh sieve placed over a bowl.
- Sprinkle salt over cucumber and toss to mix. Let sit as you prepare other ingredients.
- Combine chopped herbs, minced garlic and lemon juice in a bowl.
- Return to grated cucumber and with your hands, squeeze out as much water as you can before placing it into your bowl of herbs.
- Add yogurt and stir to combine.
- Add salt and pepper to taste. You may not need any more salt as the cucumber was salted to remove its water..
- Place in fridge to infuse flavours and chill until ready to serve.
