Creamy Yogurt, Dill and Cucumber Salad

It’s dill-icious!

Looking for a quick and healthy side salad to go with week night dinners or your lunch left overs? This creamy cucumber salad is nourishing and refreshing, adds probiotics to your gut and is easy to throw together.

Ingredients:

  • 1 large long english cucumber, sliced or cubed as you like
  • 2 – 4 green onions, whites and greens finely chopped
  • 1/2 cup full fat plain greek yogurt
  • 1 small bunch fresh dill, finely chopped
  • 1 tbsp freshly squeezed lemon juice
  • 1 – 2 small cloves garlic
  • Salt and pepper to taste

Directions:

  • Place cut cucumber, onions and dill into a salad bowl.
  • In an immersion blender or blender cup, whiz yogurt, lemon and garlic until garlic is processed. Alternatively, finely chop or mince fresh garlic, add to yogurt and lemon, whisk together to combine. Add salt and pepper to taste.
  • Add dressing to salad and toss to fully coat.
  • Serve immediately or let flavors settle in refrigerator before serving.
