The taste of fall comfort in a cup!
Yum! It sounds a little odd but this apple pie smoothie is the breakfast babe! I had an abundance of apples and had to start getting creative and out came a new edition to my smoothie rotations! Fresh (or frozen) apples along with some familiar pie spices creates a delightful and easy to drink, smoothie. Yogurt, tahini and hemp hearts add protein and healthy fats and a handful of greens add additional fiber and anti-oxidants. This one is lip smacking good and easy to throw together. Makes a great start to the day or a healthy mid day pick me up!

Ingredients (serves 2):
- 2 medium apples, quartered and cored (could use equal amount frozen apple)
- 2 large kale leaves, de-ribbed (option to use fresh spinach as well)
- 1/4 cup tahini
- 2 tbsps hemp hearts
- 1 frozen peeled banana (I pre-freeze peeled bananas on a tray then bag them to be ready for smoothies)
- 1 tsp cinnamon
- 1/2 tsp ginger powder or a slice of fresh ginger root
- 1/4 tsp clove powder
- 1/4 tsp nutmeg
- 1 tsp spirulina (optional)
- 1 pitted medjool date (optional)
- 1 cup plain greek yogurt or plain kefir (or use non-dairy yogurt or swap for a second cup of non-dairy milk for vegan)
- 1 cup non dairy milk (I use oat milk but use non-dairy milk of choice) (add more if too thick)
Directions:
- Place all ingredients in a high speed blender and blend until smooth.
- Enjoy
*Note – Cut recipe in half for 1 person.
**Note – Feel free to use kale, spinach, pea shoots or other greens or herbs such as parsley but different greens may alter the flavour. You can also add more greens if you want a bigger green hit!
