Brown Rice Breakfast Pudding with Walnuts and Dates

A warming dish that is delish!

Are you looking for a way to use left over brown rice or perhaps not a fan of traditional oatmeal and want to try something new for breakfast? Look no further and give this comforting morning hot cereal a try! Quick and easy, this warming porridge is high in fiber, plant proteins, healthy omegas, anti-oxidants and naturally sweet. This recipe also makes a healthy pudding dessert. I intentionally make extra rice just so I can enjoy this for my breakfast through the week! My go to is a brown jasmine rice but any brown rice will do!

Ingredients (serves 2):

  • 2 cups pre-cooked brown rice
  • 1 1/2 cups non dairy milk (I use oat but you could use any non-dairy milk of choice)
  • 1/4 cup chopped walnuts (could swap for another nut such as slivered almonds or pecans)
  • 2 tbsps shredded coconut
  • 2 tbsps raisins
  • 2 pitted medjool dates, sliced
  • 1 tbsp flax or chia seed
  • 1 tsp cinnamon
  • 1/2 tsp cardamon powder

Directions:

  • Place all ingredients into a small sauce pan and heat until it begins to bubble then reduce heat to low and cover, stirring every couple of minutes to ensure it doesn’t stick to the pot.
  • Cook about 10 minutes or until thickened.
  • Top with more non-dairy milk of choice or a dollop of this homemade Apple Sauce.
