Bubble, boil and brew, this apple sauce is yummy through and through!
Autumn is full of familiar and comforting smells and tastes and this apple sauce brings home the cozy! If you are looking for a way to use up the abundance of fresh apples in the fall, this easy recipe is a winner! You can freeze some for later use if you batch cook this as well. Add it to overnight oats, on top porridge, in plain yogurt or just eat it straight up for a healthy sweet treat!

Ingredients:
10 cups apples, cored, peeled and diced
1 cup water
1 tbsp pure vanilla
1 tbsp lemon juice
1 tbsp cinnamon
1 tsp cardamom powder (optional but lovely addition)
1/4 cup date sugar (optional) see note
Directions:
Place all ingredients into a dutch oven or medium soup pot on the stove top and bring to a boil.
Turn down to simmer on low immediately upon reaching high heat.
Cover, stirring occasionally to make sure it is not thickening too quickly.
Add a splash more water if sticking to bottom of pot.
Simmer at least an hour, then remove lid and continue to simmer until desired thickness is reached.
Let cool then blend with an immersion blender until smooth.
Option to leave chunky if this is more your jam!
Store in fridge in air tight container or in freezer portions if there is more than you will use in a week.
*Note – I love adding a little bit of date sugar to this recipe as it keeps it tasting more fruity than over sweetened. Options here would be to not add sugar at all or sweeten lightly with a different sugar of choice. Date sugar is a mild sweetener so doesn’t overwhelm the natural flavour of the apples so go easy if you choose a different sugar and only add to taste.
