Mmmmmmmmmmm…muffins!
Are you looking for a grain free muffin for a keto diet, a cleanse, a low carb diet or a gluten free alternative? These muffins are just the thing! These are a go to when we do our bi-annual reset cleanse. They contain no grain flours or sugar and are delicious along side a big bowl of soup! Vegan butter could replace the dairy butter if requiring dairy free. We have followed the Wild Rose Cleanse for years which, despite many other eliminations, allows for quality dairy butter so we just go for it in these muffins! These are high in protein, fiber and fats, all creating a sense of fullness which can help with cravings and level blood glucose. Add whatever herbs and spices you prefer. Option to add grated cheese if not dairy free. You could also add berries and make them a morning muffin instead, but I have never tried this!
Ingredients:
- 1 cup and 2 tbsp blanched almond flour
- 4 tbsp butter or vegan butter
- 1 tsp baking powder
- 1/2 tsp salt (or omit if using salted butter)
- 3 eggs
- Option to add herbs and spices such as chilli flakes, fresh minced or powdered garlic, dill, caraway, everything bagel herb blends, italian spices, etc. Can even sprinkle top with salt crystals, herbs or poppy seeds.
Directions:
- Pre-heat oven to 400F.
- Place almond flour, butter, baking powder, herbs and salt into a blender and pulse until thoroughly blended together.
- In a medium mixing bowl, whisk eggs then scrape contents of the blender into the eggs and combine completely.
- Place in oven and bake for about 15 minutes or until tops are golden brown.
- Serve warm along side soups and chilli.
