Easy guide to Oven Roasted Nuts and Seeds

Sizzle, sizzle, nuts for the nibble!

Roasting your own nuts and seeds is literally the simplest recipe you can follow and soooooo delish! I prefer to oven roast them as I can’t always predict heat and time in a dry pan on the stove top. Roasting nuts and seeds  expands the profile of flavour, transporting them to a higher level of yum-ness along with a sensational crunch for the win! Nuts and seeds are rich in fiber, plant proteins, omegas and a long list of vitamins, minerals and anti-oxidants. Adding nuts and seeds to your diet daily has a host of benefits as they are little super stars in the plant world! Roast your fave nuts and seeds ahead and top salads, soups, stir-fries, bowls, and breakfast dishes such as oatmeal or add to granola. You can also combine them to make a trail mix for grazing for a mid day snack!

Ingredients:

  • Your choice of nuts or seeds such as almonds, pecans, walnuts, cashews, peanuts, sunflower and pumpkin seeds.

Directions:

  • Pre-heat oven to 350F.
  • Evenly spread your whole, raw nuts or seeds of choice to a baking sheet, I recommend roasting them separate from each other as roasting time may vary slightly.
  • Place in oven for 5 minutes then remove, stir and return to oven for the additional time needed. If roasting time takes longer, stir the nuts/seeds every couple of minutes to spread around and cook evenly.
  • Times vary and the following are approximations. Always keep either your eyes or your nose on the task at hand. Nuts will start to smell fragrant and nutty as they approach readiness. They may also expand and puff out slightly. They will also continue to cook after removing them from the heat.

Estimated roasting times:

  • Almonds 15- 20 minutes
  • Walnuts 10 – 15 minutes
  • Pecans 10 – 15 minutes
  • Cashews 10 – 15 minutes
  • Peanuts 15 – 20 minutes
  • Sunflower seeds 10 – 12 minutes
  • Pumpkins seeds 10 – 12 minutes

When nuts and seeds have cooled, transfer to a glass jar or air tight container and store at room temperature for up to a month (they don’t last that long in my house)!.

Option to transfer to a bowl while cooling, drizzle some olive oil and a sprinkle of sea salt and toss for added addiction!
