Almond Flour Gingerbread Brownies

Step aside pumpkin pie, gingerbread brownies have caught my eye!


Every so often I get an idea and am inspired to literally throw a few things together and hope for the best. When it comes out better than good, I can’t help but share the delight! This recipe first came together while doing a Wild-rose cleanse which eliminates all grain flours, sugar and dairy. I was craving, well, something! I quickly realized that I could modify this idea into a cozy comfort fall inspired gingerbread but I had to add a few more things, like molasses! It then transitioned into ginger cookies that disappeared too quickly so my next attempt was to double the recipe and turn it into a cake. Truth? It disappeared even faster! My willing taste testers suggested it was like a brownie thus the gingerbread brownie was born! This recipe is rich in micro-nutrients such as Vitamin E, healthy fats, high fiber and protein, making this a healthy dessert or snack and is great for the gluten free people in your life! There is also nothing like the smell of ginger and molasses baking that just reminds me of the fall and the nostalgia of the holidays of both Thanksgiving and Winter Solstice. You can’t go wrong with this one!

Ingredients:

  • 1/2 cup smooth almond butter

  • 2 eggs

  • 1/2 – 2/3 cups coconut sugar (depending on how sweet you like)

  • 1/4 cup blackstrap molasses

  • 2 tbsp finely grated fresh ginger-root (I use the zester grater)

  • 1 tsp cinnamon powder

  • 1/2 tsp clove powder

  • 2 cups almond flour


Directions:

  • Pre-heat oven to 350f and grease a square baking dish (I used a cooking spray for this one)

  • Whisk the almond butter, eggs, sugar and molasses until there are no lumps.

  • Mix in grated ginger-root, cinnamon and cloves.

  • Turn in almond flour and mix well. The batter will be quite sticky.

  • Pour batter into baking dish and level.

  • Bake in oven for about 35 minutes.

  • Remove from oven and let cool a few minutes before devouring!
